Gingerbread Biscuits.
For all those who either missed out or asked for the recipe!
350g-12oz plain flour
5ml-1tsp bicarbonate of soda
10ml-2tsp ground ginger
110g-4oz butter/block margarine
175g-6oz soft brown sugar
60ml-4tbsp golden syrup
currants to decorate
1 egg beaten
Sift the flour, bicarbonate of soda, and ginger into a bowl. Rub in the butter until it looks like fine breadcrumbs .Stir in the sugar and make a well in the centre.
In another bowl, bear the egg and syrup together. Pour the syrup mixture into the well and mix to a fairly firm dough; knead until smooth.
Divide in half and roll out, one half at a time, on a lightly floured surface, until itÂ’s 5mm/1/4 inch thick.
Bake at 190c/375f/mark 5 for 12-15 minutes, until golden, leave to cool slightly on the tray then transfer to a cooling rack.
