Scottish Oat Biscuits.

4oz Butter

2 tablespoons golden syrup.

2oz Demerara sugar.

½ teaspoon bi carbonate of soda.

2oz self raising flour.

8oz rolled oats.

 

 

Pre-heat oven gas mark 4/180C/350F

 

Melt butter, golden syrup, sugar and bi-carb in a saucepan over a gentle heat.

It is important this is not allowed to get to hot, just melting.

Sift the self raising flour into a bowl and mix with the rolled oats.

Pour the syrupy butter into the bowl and mix well.

The biscuit mix can now be shaped into balls.

Place on a greased baking tray and flatten with your hand, cook in the oven for 12 to 15 minutes.

Once golden brown and firm remove from the oven and transfer to a wire rack.

 

Try adding Raisins or choc chips for variety.
